Atlantic Salmon with Mango Cucumber Salsa

Packed full of protein and healthy Omega’s, Wild Salmon is amazingly good for you.

This salsa is adopted from a recipe I made about 15 years ago when I first became aware of my health and what I was eating. It’s so very simple, yet incredibly tasty and full of vibrant flavours.

I could easily eat this for lunch every day of the week!

Atlantic Salmon with Mango, Cucumber Salsa

1 piece of Atlantic Salmon (or any wild caught salmon)
1/2 cup diced cucumber
1/2 cup raw mango diced
1/8 red onion diced
1 tsp apple cider vinegar
1/2 small red chili sliced (optional)
pinch salt
3 drops Young Living Lime Essential Oil

Method:

Cook your Salmon perfectly…. Check out this tutorial if you haven’t done it before!

In a bowl, mix together the rest of the ingredients.

Place your salmon on a plate and top with the salsa.

Serve immediately & enjoy!
