I’ve been on the hunt for an afternoon snack that is high in protein, dairy and wheat free….. And of course that tastes great. I played around with a few recipes and came up with this one. It’s super easy to make and is a healthy snack for morning or afternoon tea.
Chocolate Protein Bean Brownie
15 serves
1 tin organic black beans – rinsed
½ rolled oats
¼ tsp salt
1 drop culinary Cinnamon Bark Essential oil or ¼ tsp cinnamon powder
3 eggs
1 tsp baking powder
½ cup coconut oil (melted)
½ cup date syrup (or other sweetener)
½ cup stewed apple (tin apple is fine)
½ cup cacao powder
½ cup chocolate chips (optional)
Combine all ingredients (except chocolate chips) together in a blender till smooth. Stir in chocolate chips and pour into a lined slice tray. Cook in medium oven (180°c) for approx. 30 to 40 minutes until firm.
Allow to cool and enjoy.
PS: If you would like an extra protein hit add 1 to 2 tablespoons of protein powder to the mix.
